I may be wrong but can anybody advise me please

Should the jets in the carbs move when the throttle moves

it's a vacum controlled carb, the slide opens when the engine is running.

Aye-Up Alf, all good 'n' well there. The slides on a cv carb are vacuum operated and as such aren't lifted directly be the linkage (that is attached to a butterfly), but are moved by the resulting vacuum behind the butterflies. As such you need to have the engine running in order to see them moving.
The other thing with cv carbs is: They are a bit picky with the air coming in. It should be as smooth and turbulence free as possible in order to make them work reasonably.

As your bike seems to be a really proper bad-ass rat-chop (massive thumbs up), this is most likely not an option. If you don't mind picking up QUITE A FEW HORSES, you should go for two smoothbore carbs as those are directly operated and you only have to jet them right to get them working. That said, I am one ofthe Mikuni VM38-guys on the forum and Sepp and various others have had great results with 40 Dellortos. If your engine is a 750 you may also consider 36mm Dellortos, but always make sure you get right-hand carbs or all of the adjusters are in the middle of the bike and that s*cks donkey's arse.

Just PM me if you need anything. I am also doing stainless steel 2in1-carb-manifolds and stainless-steel exhausts, if this happens to tickle a fancy...

The engine is a 1981 1000cc
i cant get it to fire but it tries its hardest too! I will try to take a video later this afternoon.  When i open the fuel tap petrol leeks out of one of the air filters ive a few questions but will try take videos of what im confused about as it will be easier to explain
