I was just going to post the link to the bobber style bike and saw that you had got there before me.
The Bobber style bike is not for me either but having had a close look at it it wouldn't take much to put in back to original. The frame, engine. exhaust, suspension and wheels all look original. You would need a seat frame, seat, a tank, new fenders, foot rest and side panels. I have a seat frame and the other items are regularly available on eBay. Biggest issue would be the exhaust. The one on the bike for sale looks past its sell buy date! A good enough or even a OEM replacement is hard to come by.
I guess it just depends on what they sell it for. If it's cheap enough it may be worth converting.
